お使いのGTK+のパッケージ名を調べてみるといいと思います。
私はVineを使用しているのですが、VineではGTK+のパッケージ名がGTK2と
なっているので、sylpheed.specを以下の様に直してからビルドしています。
訂正前>Requires: gtk+ >= 2.4.0
訂正後>Requires: gtk2 >= 2.4.0
